After living, working and enjoying the hospitality in London on the civilian side of the kitchen pass, Patrick returned to Manchester knowing that his future career had to be in cooking. After short stints in various cafes kitchens around the city, he joined Trove Cafe + Bakery, after showing his flair for flavour and presentation he swiftly rose to Head Chef helping the business win multiple awards in the city and establishing Trove as destination for brunch. Patrick also launched his own Supper Club, Sirocco; this was the catalyst for the drive to expand his culinary horizons. The foundations for Erst were laid and in March 2018 Patrick opened his first Wine Bar and Restaurant.

After working in the specialty coffee scene as a barista, travelling the country attending music events and vintage car shows pulling shot after shot on the road, Will settled down and joined Trove Cafe + Bakery as a barista and Front of House all rounder. Being handed the reins to develop Trove’s drinks menu, Will helped write recipes and develop a host of in-house cordials, cocktail ingredients, varying classic cocktails and writing a short wine menu; he was hooked. For Will natural wine sat comfortably with Trove’s ethos of natural ingredients, organic agriculture and low intervention wine making. Will’s passion for craft, wine, coffee and service meant opening his first business in wine was the obvious next step. In March 2018 he welcomed the first guests to Erst: Natural Wine Bar and Restaurant.
